Easy Italian Chicken

Y’all, I love chicken so much.

It’s my favorite thing to make. I’m always throwing together new recipes to spice things up, and with this recipe…I think I might have done somethin.

One of my “lazy” ways to cook chicken is by just marinading it in Italian dressing for a few hours and then baking it, but with the healthy eating kick I’ve been on, I wanted to see if I could make my own. I read the back of the bottle to get a general idea of what the ingredients were, then used what I had in my house to make my own variation.

As it turns out…making Italian dressing at home isn’t that hard!

And, it is delicious on chicken.

INGREDIENTS

  • 2 large chicken breasts

  • 1/3 cup avocado oil

  • 2 tbsp honey

  • 1 tbsp minced garlic

  • 2 tbsp grated parmesan

  • 1 tsp salt

  • 2 tsp pepper

  • 2 tsp onion powder

  • 2 tsp Italian seasoning


INSTRUCTIONS

  • Wash your hands, it’s corona szn.

  • Preheat oven to 425.

  • Place chicken breasts in a large bowl and drizzle with avocado oil. Use your hands to spread, ensuring that each breast is completely coated.

  • Add in the honey, garlic, seasonings, and 1 of the 2 tablespoons of parmesan. Continue mixing with your hands.

  • Yes, your HANDS. You washed them, they’re clean. It’s not gross. Suck it up. Using your hands ensures that the mixture gets in all the cracks and crevices, which helps seal in the flavor!

  • Place chicken in a tinfoil-lined glass dish. Pour remaining mixture on top.

  • Sprinkle with the remaining tablespoon of parmesan.

  • Bake for 25 minutes or until internal temperature reads 165°.

  • Voila! Enjoy your delicious meal!

Steak & Zoodles

If you’re looking for a quick and easy recipe, this is the one for you! Start to finish takes roughly fifteen minutes (but it looks so fancy people will definitely think you slaved over it).

I have never really enjoyed zucchini because I’m not a fan of the consistency, so I was kinda nervous to try zoodles. Everyone was raving about them though, so I decided to pick up a package at the grocery store.

Y’all…this stuff is life changing.

Seriously, I pretty much stopped eating normal noodles. The flavor is great, and the consistency is almost identical to regular noodles - not to mention they’re way healthier.

Throw in some marinated steak and you’ve got yourself a pretty impressive meal my friend.


INGREDIENTS

  • 1-1 1/2 lb flank steak, cut into strips

  • Zoodles (I bought mine prepackaged at target)

  • Olive oil

  • 1 tbsp garlic, minced

  • 2 tbsp butter (I use earth balance because it’s dairy free)

  • 1 lemon, juiced (1/4 cup)

  • 1/4 cup low-sodium chicken broth

  • 1/4 cup chopped parsley

  • 1/4 tsp crushed red pepper

  • 1 tsp salt

  • 2 tsp black pepper

  • 1/3 cup soy sauce or coconut aminos

  • 1 tbsp Sriracha or preferred hot sauce


INSTRUCTIONS

  1. Combine soy sauce, half of the lemon juice, 1/2 cup olive oil, and sriracha in an airtight container. Add in steak strips and allow to marinade for a minimum of 30 minutes.

  2. Heat 2 tbsp olive oil in a pan (medium-medium high). Add in the steak strips, setting the marinade juices aside for later. Make sure steak is in one layer, try to remove overlap between strips. Allow to sit for about 1 minute.

  3. Stir in minced garlic, then allow to sit for a couple more minutes until steak is cooked to your preference (I like my steak a little bit more rare, so I did about 3 more minutes). Remove steak from pan and set aside.

  4. In the same pan, add butter, remaining lemon juice, red pepper flakes, chicken broth, and leftover marinade juices. Bring to a simmer and stir for about 2 minutes.

  5. Stir in fresh parsley, then zoodles. Toss for 2-3 minutes, allowing them to cook to the texture that you like. Add steak strips back in and stir for a couple more minutes.

  6. Serve and enjoy!

Seriously y’all, it’s like crack. I can’t stop eating this chicken.

I recently went to Florida to visit some of my family, and while I was there my cousin cooked up the most INCREDIBLE chicken I have ever had in my whole life. Luckily she sent the recipe home with me, so now I can share it with all of you.

I was so excited to try it out when I got home, and I’ve made it twice in the last two weeks. I’ve served it to my friends as well, and I gotta say…for as simple of a recipe as it is, it’s a hit!

Seriously, it’s super simple. All you need is:

  • Chicken thighs

  • 2 tbsp avocado oil

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 1 1/2 tsp paprika

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp salt

  • 1/2 tsp black pepper

I would also like to add that I made an enormous batch of the seasoning, and I put it on…well, everything if I’m being honest. It’s so yummy! I would probably eat it with a spoon, but I’m afraid it would give me horrible flashbacks to when the cinnamon challenge was a thing. Ugh. Shudder.

It’s also a lot crispier on the outside and juicier on the inside if you bake the chicken on a rack. This allows air to circulate around the chicken, which really helps crisp it up and seal in all the flavor.

  2. While the oven is preheating, mix all of the herbs and spices together.

  3. Place chicken in a large mixing bowl.

  4. Add in the avocado oil and 2/3 of the spice blend.

  5. Mix with your hands. Yes, you read that right - with your HANDS. You can do it, you baby. Just wash em‘ real good after.

  6. Place chicken on rack.

  7. Sprinkle the remaining spice blend on top of the chicken.

  8. Have a 30-35 minute dance break while the chicken bakes (dance break could be longer/shorter depending on your oven. Remember, chicken needs an internal temp of 165º).

  9. Let the chicken cool for 5 minutes.

  10. Eat til your heart’s content!
